What Is a Luffa, Really?

Luffa comes from a fast-growing vining plant in the cucumber family (Luffa aegyptiaca or Luffa cylindrica). When left to mature and dry, its fibrous core becomes a sponge. But when harvested young—before the fibers develop—luffa is a tender, mild-flavored vegetable perfect for cooking.

  • Optional: soy sauce or green onions

Instructions:

  1. Sauté garlic in oil until fragrant.
  2. Add luffa and cook until soft.
  3. Scramble in the eggs and combine.
  4. Season and serve hot over rice.
